Shopkeepers tell that the name of this sweet is Khajla. One specialty of this sweet is that it does not spoil for 2 months. The older it is, the more it tastes to people. Khajla sweets are available only for 20 days in Alwar. The shopkeepers who set up Khajla shops come from different districts of Uttar Pradesh. Ajay Kumar, who came to set up a Khajla shop in the Jagannath fair, said, ‘We have been setting up a shop in the Jagannath fair for almost 60 years. Earlier my grandfather and father used to set up shop here. I used to come with my father and today it has been almost 25 years since I set up shop in the fair.

Shopkeeper Ajay further said, ‘We have come from Mathura in Uttar Pradesh. The name of this sweet is Khajla which is very famous in Alwar. The people who come to the fair buy this sweet and take it to their homes. The demand for Khajla is highest in Jagannath fair. It is our ancestral work to make Khajla. Ajay told that apart from the Jagannath fair of Alwar, he also goes to Aligarh, Bulandshahr, Jheel Ka Mela, Soruji. According to Ajay, he sets up a Khajle sweet shop in fairs for about 10 months and stays at home for 2 months.

There are four types of scabies
Ajay told that there are 4 types of scabies. Itch of mawa, itch of milk, itch of sweet and itch of salt. The price of Khajla is fixed according to the fair. This time about the price of Khajla, Ajay told that the price of sweet Khajla is Rs.160 per kg. Khajla with milk is priced at Rs 200 per kg. Ajay told that Khajla is such a sweet that the older it is, the better the person who eats it will get. It can be easily kept for about one and a half months. This sweet is available only for 20 days in Alwar district. These sweets are available only in those shops which are set up at the fair of Jagannath ji.

making process
Regarding the process of making Khajle, Ajay told that this sweet is prepared with refined flour. First flour is applied. After that it is rolled out like a paratha and fried slowly in refined oil. It is baked well by bursting the layer above it. After this it is made sweet by dipping it in sugar syrup.
